The main ingredient of this Christmas cocktail is none other than the young and free-spirited <a href=\"https:\/\/www.haigclub.com\/en\" target=\"_blank\" rel=\"noopener\">Haig Club<\/a> single grain scotch whisky known for its smooth, light taste. Connect your Smartwhip and charge it to 16 bar, then disconnect the siphon and shake it for 10 seconds to evenly distribute the gas. Using a spatula, scrape the bottom and sides of the bowl.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the egg and vanilla extract to the bowl and beat the mixture at high speed for 2 minutes. Using a spatula, scrape the bottom and sides of the bowl.<br \/>\n<\/span><strong>Note<\/strong>: The butter may separate, but that\u2019s fine.<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a separate bowl, whisk the flour, baking soda, salt, ginger, cinnamon, allspice and cloves together until the ingredients are combined.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Maintaining a low speed on the mixer, gradually add the dry ingredients to the bowl with the wet ingredients and thoroughly mix the dough.<br \/>\n<\/span><strong>Note<\/strong>: The gingerbread cookie dough will be quite thick and slightly sticky.<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Split the dough in half, wrap each piece in some plastic wrap and flatten the dough into a disc. Place the dough in the fridge for 3 hours (and up to 3 days).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Before baking the cookies, preheat the oven to 175<\/span><span style=\"font-weight: 400;\">\u00b0C and line 2-3 baking trays with parchment paper or silicone baking mats.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Take one of the dough discs out of the fridge and remove the cling film. Generously dust your work surface, hands and rolling pin with flour.<br \/>\n<\/span><strong>Tipp<\/strong>: Keep a bowl of flour close by to continuously dust your work surface as this dough can be very sticky.<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Using a rolling pin, flatten the dough out on your work surface until it is approximately \u00bc-inch thick. Cut the dough into your desired shapes and place the cookies 1 inch apart on the lined baking tray. Re-roll the dough scraps and repeat the process, then repeat the entire process with the second dough disc.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bake the cookies in the preheated oven for 9-10 minutes. If your cookie cutters are smaller than 4 inches, bake the cookies for only 8 minutes.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Allow the cookies to cool on the baking tray for 5 minutes before transferring them onto a cooling rack to cool down completely.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Once the cookies are completely cool, decorate them as desired.
