Plums Crumble With Goat Cheese Foam And Macadamia Nuts

Originally from Great Britain and Ireland, the crumble is a dessert prepared with a kind of very crumbly pastry which can be served with many different types of cooked fruit. Its main feature is explained by the name itself, which means crumbled: this dessert is prepared with a mixture of flour, butter and sugar with a particular consistency similar to dry biscuits.

Ingredients 

Macerated Plums

  • 450 g plums
  • 80 g white sugar
  • 5 g lemon zest
  • 30 g cornstarch

Crumble

  • 125 g flour
  • 30 g ground almonds
  • 67 g brown sugar
  • 4 g salt
  • 4 g baking powder
  • 4 g  cinnamon
  • 4 g vanilla extract
  • 90 g cold butter, cut into cubes

Goat Cheese Foam

  • 60 g white chocolate
  • 70 g chèvre goat cheese
  • 250 g whole goat milk
  • 10 g albumin

Directions

Macerated Plums

  1. Slice the plums. Place in a large bowl, add white sugar, cornstarch, lemon zest and mix well, until combined. Transfer to a baking dish.

Crumble

  1. In a large bowl place the ingredients of the crumble and rub with fingertips until the mixture resembles crumbs.
  2. Sprinkle the crumble mixture over the plum mixture. Bake for 30-45 minutes, or until the topping is golden-brown in the oven at 180ºC.

Goat Cheese Foam

  1. Boil the milk together with the grated cheese and pour this mix over the chocolate. Using a hand blender add the albumin and emulsify all the ingredients.
  2. Pass it through a fine sieve and place inside the siphon. Charge with 8 bars using SW and keep in the fridge for 2 hours.

Assembling

Plate the foam on top of the cool down plum crumble. Garnish with some roasted macadamia nuts.
