The musky aroma of the truffle envelops the relatively neutral mayonnaise to produce a rich flavour that compliments just about any dish. - 1 egg
- 1 tbsp white wine vinegar
- 1 tbsp mustard
- 1 tbsp truffle paste
- 1 1⁄2 tbsp lemon juice
- 1⁄2 tsp salt
- 1 cup mild olive oil

- Add the truffle mayonnaise ingredients into a bowl and roughly combine them using a whisk.
- Pour the ingredients into a cream dispenser, connect your Smartwhip, and charge it to 13 bar. Shake the cream dispenser for approximately 5 seconds, then release the truffle mayonnaise into a bowl.
The truffle mayonnaise can be used straight away or stored in the refrigerator in an airtight container for up to 5 days. Use it as a dip, a bread spread, or as the base for your very personal mayonnaise-based creation.
