Tender Steak with Paloma’s Favourite Marinade

An unknown fact about the siphon is that it is also a phenomenal tool for marinating. Like with rapid infusion, nitrogen cavitation forces the marinade to penetrate the meat deeper and faster than overnight marinating would, tenderising it in the process. In just an hour, you can deliver a perfectly marinated, tender steak infused with the riches of dried basil, red pepper flakes, soy sauce and Worcestershire sauce and enjoy the taste of umami with every bite. 

Ingredientes

    • 230 g sirloin steak (cut into pieces of about 1” x 2½” x 4”)
    • ⅓ cup soy sauce
    • ¼ cup Worcestershire sauce
    • 2 lemons, juiced
    • ½ cup olive oil
    • 3 tbsp dried basil
    • ½ tsp red pepper flakes
    • 1 tbsp fresh parsley, chopped
    • 1 tsp black pepper

    1. Briefly combine the soy sauce, Worcestershire sauce, lemon juice, olive oil, dried basil, red pepper flakes, parsley and black pepper in a bowl. 
    2. Add the cut pieces of steak to the bowl and mix the ingredients well to evenly coat the steak. 
    3. Place the pieces of steak inside the cream dispenser, connect your Smartwhip and charge it to 17 bar. Shake the cream dispenser for 5-10 seconds to evenly distribute the gas, then put the cream dispenser in the fridge to marinate for approximately 1 hour.
    4. After the marinating time has passed, hold the cream dispenser upright and press the lever to release the pressurised gas completely.
      Consejo: Coloque un recipiente sobre la boquilla del dispensador de crema para recoger el líquido que pueda salir. 
    5. Unscrew the lid of the cream dispenser and pour the contents out into a bowl. Let the marinated meat sit for a few minutes to allow the bubbles of marinade which are packed with flavour to burst. 
    6. Cook the meat to your desire.

Revestimiento

Serve the meat with a side of baked potatoes, steamed vegetables or a winter salad, and garnish with a few leaves of fresh parsley.
