Linguine With Two Tomato Consistencies

That’s Amore! Chef Francesco uses Smartwhip to create a stunning tomato foam recipe to serve with linguine. The result is a creamy main course that will leave you wanting more.

Equipment 

Ingredients 

Linguine

  • 100 gr Linguine
  • Oil q.s.
  • Water q.s.

Tomato sauce

  • 200 gr tomatoes
  • Oil q.s.
  • 1 garlic clove
  • Parsley
  • Salt
  • Pepper

Parmigiano sauce 

  • 30 gr Parmesan
  • 10 gr milk
  • 10 gr fresh cream
  • Salt

Garnish

  • Vene cress leaves

Directions

Parmesan sauce

  1. Melt all the ingredients together in a double boiler and then blend everything.

Tomato sauce

  1. Fry in a pan the tomatoes with oil, one garlic clove, and parsley.
  2. Blend everything and filter.
  3. Add to the tomato sauce also the Parmigiano sauce.
  4. Transfer it to the cream dispenser.
  5. Attach the Smartwhip device and charge up to 15 bars.

Linguine

  1. Cook the Linguine in a pan with some oil and water.
  2. When the Linguine is almost cooked then add the tomato sauce.
  3. Garnish it with tomato foam and with some fresh vene cress leaves.
