Thai Curry Soup with Coconut & Turmeric Foam

This vibrant Thai curry soup is a delicious vegan-friendly option for those in need of a hale and hearty meal. Filled with nourishing ingredients such as turmeric, spinach and coconut milk, the soup has a dense texture and aromatic flavours that are balanced by an airy coconut and turmeric foam.

Soup Ingredients

    • 125 g spinach
    • 200 ml coconut milk
    • 1 stick of lemongrass
    • 1 1⁄2 limes
    • 1 1⁄2 tsp green Thai curry paste
    • 10 g ginger, finely chopped
    • 2 medium-sized shallots, finely diced
    • 1 tbsp olive oil
    • 1 clove of garlic, minced
    • 1.4 litres of water
    • Salt to taste
    • Lime zest to garnish

Coconut & Turmeric Foam Ingredients

    • 200 ml coconut milk
    • 1 tsp turmeric
    • 2 tsp ginger syrup
    • 1⁄8 tsp xanthan gum
    • Salt to taste

Directions

To ensure a smooth cooking experience, please read the Smartwhip care and safety guidelines before usage.

    1. For the soup, begin by sauteing the shallots in olive oil until they become translucent. Add the ginger and garlic and saute for another minute.
    2. Add the remaining soup ingredients except for the lime juice and bring the soup to a boil. Allow the soup to simmer for at least 10 minutes.
    3. Remove the pan from the heat, squeeze in the lime juice and blend the soup until you achieve a smooth consistency.
    4. For the coconut-turmeric foam, briefly whisk the coconut milk, ginger syrup, turmeric and xanthan gum together and add salt to your taste.
      Tip: If the coconut milk is lumpy, briefly heat it up in a saucepan until it is smooth.
    5. Pour the coconut-turmeric mixture into a cream dispenser, connect your Smartwhip, and charge it to 16 bar. Shake the cream dispenser for 5-10 seconds to evenly distribute the gas, then set the device aside for 15 minutes.

Serving

Pour the soup into four bowls and release a generous dollop of the coconut-turmeric foam on top. Garnish the soup with a little bit of lime zest and it’s ready to be served!
