Spinach Sponge recipe with your friends or colleagues!

Spinach Sponge

A kind of soft crumb to cook in the microwave for about a minute. It is very quick to prepare and only requires the use of the cream dispenser. You can also indulge yourself with the colors you prefer and make it beetroot or fruit, sweet or savory.

Equipment 

Ingredients 

  • Egg white 125g
  • Yolk 80g
  • Flour 45g
  • Salt
  • Cooked spinach 50g
  • Stracciatella 600 gr
  • Anchovies 40 pieces

Directions

Blend all the ingredients together until the mixture is smooth. Filter it through a fine sieve and pour it into the cream dispenser, then close it and charge with 9 bars pressure.

Fill plastic cups halfway and place them in the microwave at 750W for about 30 seconds. Let them cool, take them out of the mold and cut out small discs with a pastry cutter.

Serving 

Stuff each disc with stracciatella, anchovies and decorate with a small spinach leaf.
