Sour Cherry Cocktail

This sour cherry cocktail is made with fresh lemon juice and cherry syrup to create a smooth, sweet gin drink. The syrup used for the foam complements the acidity of the lemon beautifully; adding a rosy blush and nuanced notes of fruit in every sip.

  • Shaker

Cherry foam

  • 200 ml egg white
  • 200 ml cream
  • 100 ml cherry syrup


  • 45 ml London Dry Gin
  • 20 ml fresh lemon juice
  • 15 ml vanilla syrup


Cherry foam

  1. Start by preparing the Smartwhip system.
  2. Pour into the cream dispenser 100 ml of cherry syrup, 200 ml of cream, and 200 ml of egg white.
  3. Close the lid.
  4. Connect the cream dispenser to the Smartwhip device.
  5. Charge the cream dispenser with 12 bars of N2O.
  6. Shake it.


  1. Mix 45 ml London Dry Gin with 20 ml fresh lemon juice and 15 ml vanilla syrup.
  2. Shake it.
  3. Strain it over a cocktail glass
  4. Pour the cocktail into the glass and top it with the cherry foam.
