Espuma de sandía

A chocolate grid filled with a watermelon foam. This dessert is fresh, summery, thirst-quenching, salt, and sweet at the same time.



  • 600 gr of blended and filtered seedless watermelon
  • 300 gr custard
  • 100 gr cream
  • Fresh mint
  • Flores comestibles
  • Watermelon cubes
  • Bavarese with spinach
  • Chocolate grid


  1. Blend and filter seedless watermelon
  2. Add in a mixer the watermelon juice with 300 gr of custard and 100 gr of cream
  3. Transfer it to a cream dispenser
  4. Connect the Smartwhip device and charge it with 10 bars of the pressure
  5. Shake it and serve it with a salted baverese with spinach, watermelon cubes, edible flowers, and fresh mint.
